Have you noticed them already? The yellow little buds popping up in the grass here and there, like everywhere. The dandelion is an extremely powerful detoxifying plant. Isn’t it wonderful how nature gives us exactly what we need at exactly the right time?!

At my place the yearly sight of a yellow outdoor carpet is always a happy moment, since that means sunny times are coming! The nice thing about a wild garden is to have all these medicinal herbs within reach and very often in abundance, as they are strong weeds. If you don’t have a garden there is probably a field or park in the neighborhood where you can find them for the following recipes I would like to share with you.

Paardenbloemblad

Dandelions have already been described in centuries old literature. They have the power to boost your digestion and purify the liver and kidneys. Taraxum Officinale or dandelion works as a mild purgative, diuretic and balances the bloodsugar level. They can be used to treat headache, skin problems, arthritis, urinary infections, prostate disfunction and diabetes.

But a little bit of research learns that they are far more than a healing plant! Dandelions can also be used in the paint industry as a coloring agent. Beerbreweries and winemakers add the yellow flower to their blend for a distinguished flavor. And the most unexpected use is for the Russians to produce rubber from the juice of certain kinds of dandelions.   • 100 dandelion buds
  • lemon balm citroenmelisse
  • 1/2 lemon
  • 1 bag of pectine for low sugar jam
  • 1 orange
  • 200 ml water

Directions

  1. Now cook the buds, without the green parts, in the juice of the lemon, orange together with the herbs and the water. Leave it overnight to cool of and absorb all the active nutrients.
  2. The next morning squeeze out all the juice by the use of a kitchen clothe. Measure out the volume of the liquid and put this to a simmer. Add 55g of brown sugar for every 100 ml. Simmer until thick.

PrintDandelion pancakesThe bitter leaves and buds contain lot of vitamine C and iron. You can use them as a salad or added to soups and dressings. If you don’t like bitter taste, parboil them very shortly. In the following recipe, they are cooked like spinach first.Ingredients

  • 500 g dandelion leaves
  • 100 g flour
  • 2 tbsp  grounded flaxseed or two eggs if you prefer
  • 100 ml water
  • 400 ml plantmilk
  • pinch of salt

Directions

  1. Put the flaxseed in a little water to swell. Make the mixture of flour, milk, salt and add the flaxseed when swollen.
  2. Wash the leaves and cook them in the water for 10 minutes. Put them in a sieve and use the water for a soup if you want.
  3. Chop the dandelion leaves and mix with the dough. Bake the pancakes in a little coconut oil.

  • 500 g dandelion leaves
  • 2 dandelion flowers
  • 1 onion
  • 2 stalks leek
  • 2 carrots
  • 1 sweet potato
  • 2 tbsp olive oil
  • vegetable broth
  • 1 bay leaf
  • 1/2 tsp thyme
  • 2 cm ginger grated

Directions

  1. Fry the chopped onion and leek.
  2. Add all the vegetables and leaves.
  3. Add the herbs, the broth and water.
  4. Let it boil for 20 minutes and mix the soup.

Tips

While you are out to gather the leaves, don’t hesitate to add nettle and elder to it.
